Serve at around 16–18°C, and give it twenty minutes in the glass — the appassimento fruit opens up considerably with air.

How it's made

Super Tuscan is a style, not an appellation. It began when Tuscan growers started blending native Sangiovese with French varieties and ageing in French oak — the approach behind Sassicaia and Tignanello, wines that routinely sell for more than £50 a bottle. Scaranto builds this Special Edition on the same idea.

The grapes are hand-harvested, then partially dried before fermentation using the appassimento method. Drying concentrates sugar and flavour in the berry, which is where the depth of colour, the density of fruit and that velvety mouthfeel come from.

The wine is then aged three months in French oak barrels, which knits the fruit together and adds the cocoa and tobacco notes on the finish.
